Mom's carrot cookie recipe
Mix together shortening, sugar, carrots, eggs. Add orange peel. Sift dry ingredients together and add to first mixture. Add coconut. Drop on lightly greased sheet. Bake at 350 degrees for 10-12 minutes.
Cool and top with icing.
