Thaw and drain the packages of spinach. Squeeze out the excess water. Set aside.
Lightly brown the beef or ground turkey in a skillet. Sprinkle with the salt and add the chopped onion. Cook 5 minutes. Stir in the tomato sauce, water, sugar and spices. Cook until flavors blend.
Cook the noodles until just barely tender, drain and add to the meat sauce.
In a 9X13 inch pan, layer half of the meat mixture, add all of the spinach in a layer, and then spoon on the rest of the meat mixture. Blend together the ricotta cheese and sour cream. Spoon over the top of the meat mixture. Sprinkle with parmesan. Bake in a 375 degree oven for 35 to 40 minutes.
