Suggest a better description1. Rinse & dry the chicken; trim away the excess fat. Slide your fingers under the skin to loosen it from the flesh. Season the chicken inside and out with salt & pepper
2. Combine the herbs, spices, 2 tablespoons of oil & 2 tablespoons of water in a food processor & process to a paste. Rub the mixture inside the chicken, under the skin, & over the skin on all sides.
3. Preheat the oven to 180 degrees C
4. Add the remaining tablespoon of oil, the chopped onion & a good pinch of salt to an enamelled cast-iron casserole just large enough to hold the chicken. Set over a medium heat, cover & steam the onion for about 10 minutes. Add the chopped preserved lemon rind and cook, uncovered, until it begins to caramelise.
5. Tie the legs of the chicken together with kitchen string. Place the chicken on its side in the casserole and cook for about 5 minutes or until browned. Carefully turn the chicken onto its other side and cook another 5 minutes until browned. Turn the chicken breast side up, cover & place in oven for 1.25 hrs
6. Transfer the chicken to a shallow baking tin on its side. Turn on grill and deeply brown for 3-5 minutes. Turn over and brown the other side for 3-5 minutes. Rest for 10 minutes
7. Meanwhile skim off fat from the casserole. Add the olives & 4 tablespoons of water, bring to the boil and cook, stirring until reduced to a thick sauce.
8. Carve the chicken and serve the with sauce poured on top.
