1. Preheat the oven to 375 degrees. Butter a shallow 2-quart baking dish
2. In a large heavy skillet set over medium-high heat, melt 1 tablespoon of the butter. Add the onion and cook stirring, until translucent and fragrant, about 3 minutes. Season with salt and pepper. Add the sherry and soy sauce and cook until most of the liquid has evaporated, about 5 minutes. Remove the pan from the heat.
3. In a large heavy saucepan set over medium-low heat, met 4 tablespoons of the butter. Add the flour and cook, whisking constantly, until the roux cooks and bubbles a bit, about 2 minutes (make sure it doesn't brown). While whisking constantly, slowly add the chicken broth. Bring to a boil. Whisk in the milk, reduce the heat to medium and cook until thickened, about 5 minutes. Add the lemon juice and tuna to the pan and stir just to combine. Season to taste with salt and pepper. Remove the pan from the heat.
4. Bring a large pot of salted water to a boil. Add the noodles and cook for 2 minutes. Add the peas and cook for 1 more minute. Drain the noodles and peas and return them to the pot. Add the sauce, stirring gently to coat the noodles. Transfer the mixture to the prepared backing dish.
5. In a small saucepan, melt the remaining 1 tablespoon butter. In a small bowl, combine the cheese and bread crumbs. Drizzle in the melted butter and toss. Sprinkle the mixture evenly over the top of the casserole. Bake until the topping is crisp and the sauce is bubbling, 20 to 25 minutes. Let cool slighty before serving.
