A mainstay for Scillian Christmas dinner
1 ½ lb Sicilian sausage
2 med onion
Lots of garlic
3 x 24 oz Roma garlic sauce
1 Tbs sugar
1 ½ Tsp fresh basil
1 tsp of Italian seasoning (basil, marjoram, oregano, rosemary, thyme)
½ Tbs kosher salt
½ tsp pepper (going to need more) – 1 Tbs black & red pepper blend & a pinch of ground habenero
8 oz noodles (don’t cook) – the lasagna is going in the oven. They will cook just fine
60 oz ricotta cheese
4 eggs
1 ½ lb Mozzarella
3/4 cup Parmesan
Needs big blue lasagna pan
Heat oven to 375 degrees.
In dutch oven, brown meat, onion and garlic; drain.
Stir in Roma sauce. Pepper and fresh basil only are need w/ Roma
In 13 x 9 baking dish, layer 1/3 of sauce mixture, 1/2 uncooked lasagna noodles, 1/2 of combined ricotta cheese, 1/4 cup parmesan cheese, parsley and 1/2 of mozzarella cheese;
repeat layers ending with sauce mixture.
Cover tightly with foil. Bake 1 hour;
uncover, sprinkle with remaining parmesan cheese.
Let stand 10 minutes before serving.
350 F oven
60 min covered
10 – 15 min uncovered to brown
Bake a garlic French loaf and save some sauce for dipping
Serve browned holiday sausage and sauce w/ onion on the side
