Found this on Allrecipes.com. The alfredo sauce replaces all but 1/4 cup of cream with creamed cauliflower to reduce the fat content.
Saute garlic in olive oil until GBD (golden brown and delicious!) in a large pot (large enough for next six ingredients)
add next six ingredients, bring to a boil
cover and reduce heat to a simmer
simmer until cauliflower is tender, turn off heat
using a stick blender, puree the cauliflower blend until creamy smooth
add heavy cream and cheese, blend (I use a whisk) thoroughly as cheese melts
