Think "twice-baked potato"

Ingredients

2 pounds cauliflower; Fresh or frozen
8 ounces Cream cheese
8 slices Bacon
1 tablespoon Freeze-dried chives
1 tablespoon Freeze-dried parsley
2 teaspoons Onion powder
1 teaspoon Garlic powder
1 teaspoon Salt
1 teaspoon Black pepper
8 ounces Cheddar cheese; shredded

Servings  

Preparation

Steam cauliflower until very soft.

Meanwhile, cook bacon till crisp. Drain, crumble and set aside.

Preheat oven to 375F.

Beat cream cheese with chives, parsley, onion powder, salt and pepper till combined.

Add cauliflower, and beat with mixer until only small chunks remain.

Fold in cheddar cheese and bacon.

Bake until bubbly and top begins to brown, about 30 minutes.

Sooo good

This was sooo good! Totally the flavor of twice baked potato but much lighter. Boyfriend raved & he is generally rather stoic. Had it as a side.
