Heat a large skillet over medium heat, add sesame oil, pancetta and fresh ginger.
When ginger sizzles, add cauliflower, garlic, soy sauce, and fish sauce and over high heats stir-fry for 4 minutes
Reduce to medium heat, whisk water and cornstarch until smooth, add to skillet
Add cashews
Cook until most of the liquid has evaporated and florets retain an al dente bite. about 5-6 minutes
During the last minute add the pineapple
Garnish with cilantro
