Cheddar and cauliflower soup

Tasty soup


2 tablespoons olive oil
1 yellow onion; diced
2 1/2 lbs cauliflower; cut into pieces
5 cups chicken broth
2 cups heavy cream
2 teaspoons Salt
Black pepper; ground
8 oz white cheddar cheese; shredded

Original recipe makes 8



In a large pot over a medium cook onions in oil for 7 minutes. Add cauliflower and cook for further 5 minutes. Add broth, cream, salt, pepper. Bring to boil. Simmer for 10 minutes. Blend soup. Add cheese.

This was nice and light-tasting. I also nixed the cream and used milk. A treat to eat!

I added butter to cook onions and a teaspoon of Ginger to the sauce it was delicious.
