Very easy anytime meal biscuit. Can also make extra and freeze to have on hand.
Heat oven to 400 degrees. Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, salt and pepper. Make a well in the center. Using a fork, gently stir in the soda and heavy cream, mixing just until incorporated (do not over mix). Fold in the chives and only 1/2 half of the cheddar cheese.
Drop spoonfuls of the batter on the prepared baking sheet. (Should have about 8 biscuits). Brush each biscuit with the remaining 1 tablespoon of heavy cream, sprinkle with the remaining 1/2 cup of cheese. Bake until puffed and golden brown, 15 to 18 minutes. Serve biscuits warm or at room temperature.
NOTE: If baking extra to freeze, let cool completely and wrap tightly with plastic wrap and place in plastic bags and
freeze for up to 3 months.
