Try with Quorn meatless chicken breasts.

"These were yum! I used less salsa and cream cheese and it was great. I didn't have enchilada sauce on hand so I made my own with a can of diced tomatoes, 2T chili powder, 1/4 t garlic powder and cayenne pepper and 1 T taco seasoning. I put it all in food processor then simmered while getting everything else ready. I will for sure make these again!"

These were good. I found the inside mixture a bit creamy so I might cut the cream cheese in half next time, but overall pretty good.

I just finished making these. They were great. I can't wait to eat them again tomorrow. I was out of onion, but I added diced green chiles. I loved them - so easy.
