Ready in 40 minutes
Try with Quorn meatless chicken breasts.
PREHEAT oven to 350(F.)
1 - Spray Large, Nonstick skillet with nonstick cooking spray
2- Add Onion; cook over medium heat, stirring occasionally, for 4 to 5 minutes or until tender.
3 - Add chicken, 1/2?? cup cheddar cheese, salsa and cream cheese, cook, stirring occasionally for 2 to 3 minutes or until cheeses are melted.
SPOON a scant 1/3 cup chicken mixture down center of each tortilla; roll up.
4 - Place in 13 x 9-inch (3-quart rectangular) baking dish; drizzle with red enchilada sauce.
5 - Sprinkle cheddar cheese; cover.
6 - Bake for 15 minutes or until heated through and cheese on top is melted.

elizabethgarriottbeverly 2y agoThese were yum! I used less salsa and cream cheese and it was great. I didn't have enchilada sauce on hand so I made my own with a can of diced tomatoes, 2T chili powder, 1/4 t garlic powder and cayenne pepper and 1 T taco seasoning. I put it all in food processor then simmered while getting everything else ready. I will for sure make these again!

Buddercup 6y agoThese were good. I found the inside mixture a bit creamy so I might cut the cream cheese in half next time, but overall pretty good.
joggyjams 6y agoI just finished making these. They were great. I can't wait to eat them again tomorrow. I was out of onion, but I added diced green chiles. I loved them - so easy.
