Cheese & Chicken Enchiladas

Nonstick cooking spray
1 small Onion; Chopped
1 1/2 cups Cooked Chicken Breast; Shredded
3/4 cup Shredded Cheddar Cheese; Divided
1 (12-oz) Bottle Chunky Salsa
1/2 (8-oz) Package Light Cream Cheese
8 (8 inch) Taco Size Flour Tortillas
1 (8-oz) Can Red Enchilada Sauce

Original recipe makes 4 Servings



PREHEAT oven to 350(F.)

1 - Spray Large, Nonstick skillet with nonstick cooking spray

2- Add Onion; cook over medium heat, stirring occasionally, for 4 to 5 minutes or until tender.

3 - Add chicken, 1/2?? cup cheddar cheese, salsa and cream cheese, cook, stirring occasionally for 2 to 3 minutes or until cheeses are melted.

SPOON a scant 1/3 cup chicken mixture down center of each tortilla; roll up.

4 - Place in 13 x 9-inch (3-quart rectangular) baking dish; drizzle with red enchilada sauce.

5 - Sprinkle cheddar cheese; cover.

6 - Bake for 15 minutes or until heated through and cheese on top is melted.

These were delicious, gona tryum with a white cheese sauce next time, but these were great, made my own sauce,(this is not my recipe, just my photo) CCheryl

These were yum! I used less salsa and cream cheese and it was great. I didn't have enchilada sauce on hand so I made my own with a can of diced tomatoes, 2T chili powder, 1/4 t garlic powder and cayenne pepper and 1 T taco seasoning. I put it all in food processor then simmered while getting everything else ready. I will for sure make these again!

These were good. I found the inside mixture a bit creamy so I might cut the cream cheese in half next time, but overall pretty good.

I just finished making these. They were great. I can't wait to eat them again tomorrow. I was out of onion, but I added diced green chiles. I loved them - so easy.
