Cheese and Bran Muffins

These savory muffins are wonderful for breakfast or as a side dish with dinner!


2 1/2 cups Whole-wheat flour
1/2 cup Bran flakes
1 tsp Baking Powder
1 tsp Salt
1 tsp Black Pepper; freshly ground
1 tsp fresh rosemary; finely chopped
200 g Unsalted butter
3 whole Eggs
1 cup Buttermilk
2 medium onions; chopped and sauted in olive oil
1/2 cup Parmesan cheese; grated
1 cup cottage cheese
1 tbsp fresh basil; chopped

Original recipe makes 12



1.- Preheat Oven to 180 degrees C and grease 12 muffin cups or use muffin papers.

2.- Mix all the dry ingredients into a large bowl.

3.- Add softened butter by hand until you have a bread-crumb consistency.

4.- In a separate bowl whisk eggs, buttermilk and herbs before folding the cheeses and cooled sauted onions.

5.- Fold this wet mixture into the dry ingredients.

6.- Spoon this mix into muffin cups and bake for 35 - 40 minutes or until a toothpick comes out clean.

7.- Cool on wire rack and serve them warm.
