Melted cheese with olive oil and cruncy garlic flavoured with oregano.
Use a soft/flacid rounded cheese in terms of texture ( like the portuguese queijo da Serra or queijo de Azeitão), cut the top skin of the cheese and take one or two spoons and reserve just to win some room inside the cheese body. Eat the olive oil in a small pan, when it is medium hot add the garlic thinly shoped, attention not to burn it, you can take the pan from the heat while the oil is hot. When the garlic is golden and crispy add put it into the interior of the cheese, mix with the spoon, the cheeese will melt gorgeously and to finish add the oregano .
