Low-fat version of cheesecake. They use blueberries...but you should try strawberries or other fruit.
Preheat oven to 350. Spray 9-inch pie pan with oil.
Put crumbs in small bowl and add apple juice.
Stir with fork until the crumbs are moist but not sticky.
Press crumb mixture into pie pan, pressing it up the sides and bottom of the pan.
Bake 15 minutes or until golden, taking care not to let it burn.
(Cracks in the crust are normal in oil-free crusts)
Set crust on wire rack to cool completely.
Bring apple juice to a simmer over medium heat. Turn off heat but leave saucepan on burner. Sprinkle the gelatin over the juice and stir until the gelatin dissolves.
In a food processor, combine yogurt, ricotta cheese, brown sugar, lime juice, and gelatin mixture and process until smooth.
Scrape into bowl and fold in 3/4 cup of blueberries.
Taste and adjust the sweetness with brown sugar.
Pour into cooled crust and smooth with spatula.
In food processor, puree remaining cup of blueberries until smooth. Strain through a fine sieve, pressing against the berries to extract as much juice as possible.
Pour into a clean squeeze bottle and squirt thin parallel lines on top of the filling.
Rotate the pie 90 degrees and using a toothpick or knife point, interesect each blueberry line to make a wavy pattern.
Refrigerate for at least 2 hours.
To serve, cut into 10 portions and garnish with a drizzle of puree on the corner of each serving.
Top each piece with a blueberry and a mint sprig.
If you use other fruit, use lemon if seems like a better fit.
