Mix butter, flour, sugar, egg yolk and vanilla until well combined. Shape into disc and refrigerate at least 1 hour.
Heat oven to 400. Press 1/3 of dough into bottom of springform pan. Bake 8 minutes and cool. Turn oven to 475.
In large bowl, mix cream cheese at medium speed. Slowly add sugar. Mixing at low speed, add remaining ingredients. Beat 3 minutes until well mixed.
Press 2/3 of dough onto sides of pan, 1" down from top. Pour cream cheese mixture into prepared pan. Bake 12 minutes. Turn oven to 300 and bake another 35 minutes. Turn oven off and leave in 30 minutes. Cool on wire rack.
