This had to be my favorite side dish from South Beach.

"Loved this; adapted to what I had in the fridge. Boiled the chopped cauliflower in salted water. Only had 1% milk so used that, and also added some nutty Parmesan cheese. Even my husband liked it!"

Ingredients

Are you making this? 
4 cups Cauliflower florets; (one head using the top)
1 1/2 tsp I can't believe it's not butter; or Smart balance
1 oz fat-free half & half
1/2 cup mozzarella cheese; shredded
salt; to taste
pepper; to taste

Original recipe makes 4 Servings

Preparation

1. Steam or Microwave cauliflower until soft.

2. Put in blender (or Food Processor) with other ingredients and stir.

Note: Blender will leave texture to recipe. Food processor with make it a smooth consistency.
