This is a great meal to eat an often boring veggie of Cauliflower. The tastes and textures work well together and it is very much a staple meal at our house.
Begin Steaming the cauliflower.
Cook onions in melted butter or oil until caramelized and soft. Could also cook beef first, remove and use the beef grease. We use grass fed beef, very little leftover grease so we do not do beef first.
While onions are cooking prepare the roux. Cook the flour and butter until a paste is formed. Then add milk until consistency is right.
Brown Beef and add in oregano and garlic. Remove excess grease after beef is cooked.
Mix beef, onions, roux and cauliflower. Stir in shredded cheese. Should end up with a nice and thick cheesy mixture of happy times and good eating.
