Easy to Make. Kids Love it!

"I've made this twice now, and it's very good! Chicken is moist and rice has some decent flavor! Definitely a good "what do I do with these defrosted chicken breasts" kind of meal! I used cream of chicken and cream of celery, both are good. I also seasoned the chicken breasts separately before adding to rice, added some frozen peas and corn and once I removed the foil and added the cheese, I stuck it back in the oven for 5 minutes on high broil to get crispy cheesy taste. Great versatile recipe (I've used pepper jack cheese and mexican blend cheese- both different and both very good)."

1 10.75-oz can Cream of Chicken Soup; Regular or 98% fat free
1 1/3 cups Water
3/4 cups Rice; Uncooked Regular long-grain white
1/2 teaspoon Onion powder
1/4 teaspoon Black Pepper; ground
1 1/2 pounds Skinless Boneless Chicken Breast Halves; about 4 - 6
1 cup Cheddar Cheese; (4 oz) Shredded

Original recipe makes 4



Mix soup, water, rice, onion powder and black pepper in 2qt. shallow baking dish. Top with chicken. Sprinkle chicken with additional pepper.

Cover with aluminum foil and bake at 375 F for 45 min. or until chicken is no longer pink and rice is done.

Uncover, sprinkle cheese over chicken, the cheese melts from the heat of the chicken.

For a nice addition stir in 2 cups of fresh or canned, or frozen vegetables into soup mixture before topping with chicken.

Instead of garlic powder I used hot wing seasoning, threw in some tapatio and a red bell pepper. It was a little spicy but so good! Easy too!

Good recipe! I used left over chicken from a whole chicken prepared the night before; shredded the chicken and submerged it into the rice to keep it from drying out. I used cheddar cheese soup. Tasty :)

I used cheddar cheese soup (cause I had it & wanted to use it up), salsa, garlic powder & water to stir into the rice. Then I cut the chicken breasts to make them thinner & laid them on top. After cooking, I did put some cheddar cheese on top of chicken. It was really good - spicy. But, chicken breasts are dry, so I will use thighs next time.

Came out very good I cooked my chicken and rice first so it would be all the way done seasoned my chicken mixed rice and cream of chicken soup and broccoli together then put cheese on it put it in the oven for the cheese to melt

Good dish but the chicken needs some kind of extra seasoning because it came out bland. The rice was tasty and I added fresh broccoli when cooking it. Also just pound the chicken flat to keep it within the given cook time
