1/4 c Onions; chopped
2 tb Butter
2 tb Flour
1 1/4 c milk
1 c Cheddar Cheese; grated
Salt; to taste
Black Pepper; freshly ground
3 Potatoes; peeled, and thinly sliced; not rinsed

Original recipe makes 4 Servings



Preheat oven to 350 degrees. Cook onion in butter until soft, add flour and cook for 2 minutes, whisking. Whisk in milk and cook until thick and bubbly.

Remove from heat and add 3/4 cup of cheese, stirring until melted; season with salt and pepper.

Layer half of potatoes in a baking dish and sprinkle with salt and pepper. Cover with half of sauce. Layer remaining potato slices on top of sauce and season. Top with remaining sauce and sprinkle with remaining cheese. Bake, covered, for 30 minutes or until potatoes are tender. This recipe yields 4 servings.

Fabulous scalloped potato recipe! I doubled it and increased the baking time by one hour. Thirty minutes isn't nearly long enough.

Think it's missing some directions. After baking covered for 30 minutes, you might want to uncover it and continue to bake 30-45 minutes longer or until potatoes are tender and top is browned. All-in-all I liked this versions preparation, much better than what I was doing.

I've made this several times in the past and have loved it each time! As stated below, however, the potatoes need at least an hour to cook. May try adding broccoli next time just to mix it up.

Tried this recipe last night and it was really good. Read the reviews and parboiled the potatoes for approx 10 min in the microwave. Added about 2oz of cream cheese, minced garlic and herbs to the cheese mixture. Also doubled the shredded cheese amount for my family's taste. Cooking time was still a bit off but I was prepared for that. Will try adding chicken breast and low fat bacon next time. It was delicious, just a tiny bit leftover and my hubby ate it for breakfast the next day. A keeper, thanks for sharing!!!

I'm lactose intolerant, so I used almond milk and less cheese. It came out smelling wonderfully! The sauce thickened as it cooled.
