This biscotti has some surprise ingredients and is sure to impress.
Soak cherries in the wine and vinegar for at least 1 hour.
Drain cherries. In medium bowl whisk together flour, salt, baking soda, and lavender. Add pistachios, chocolate, orange peel and drained cherries. Set aside.
In mixer bowl cream the sugar and butter. Next cream in the egg. Mix in the flour mixture.
Very lightly flour counter and hands. Roll into two 8" logs (about 1 1/2" in diameter).
Place on baking sheet covered with parchment paper or silicone mat.
Bake at 350 for 20 minutes, or until lightly browned and firm to touch.
Remove from the oven and cool 10 minutes.
Cut into 1/2" slices on a diagonal.
Place on the baking sheet on sides. Bake 10 minutes.
Feel free to switch the nuts to other varieties. If you don't have Lavender Balsamic, either omit or use juice from the orange.
