From my very brief experience with them, Clafoutis are basically giant crepe-like cakes studded with little delicious fruity gems. Cherries are classic, but other pitted fruits or berries would go well instead. This version is from Mollie Katzen (Sunlight Cafe).
Preheat oven to 375°F.
Heat butter in pan (9 x 13, 10 inch pie pan, or 9 inch square pan all seem to be acceptable) and tilt/brush to coat when melted.
Blend milk, sugar, eggs, vanilla extract and salt in a bowl. Add in flour. Can use a food processor or a whisk.
Pour batter in pan, then add in cherries. Put pan in oven and bake 30-35 minutes
Sprinkle with powdered sugar if desired.
If you are pitting the cherries, you may want to toss them with a bit of flour to keep the juices inside.
