Cherries are in season! This is one of my favorite recipes from the original Joy of Cooking, modified slightly by moi. It's easy and delicious, and always gets rave reviews. (If cherries aren't in season, just use canned, rinsed well.)
Preheat oven to 350 F. Mix tapioca and cherry juice and set aside. Melt butter in saucepan over medium heat. Remove from heat and add sugar, oats, flour, baking powder, soda, and salt. Mix well and spread half the mixture into an 8x8" baking dish. Top with cherries. Pour tapioca mixture evenly over cherries and top with remaining oat mixture. Bake, uncovered, for 35-40 minutes until golden.
