1. Stir together sugar and cherry juice in a saucepan over medium heat untilsugar disolves. Remove from heat, stir in mint leaves, cover, and let steep20 minutes. Strain liquid through a fine mesh sieve; discard mint leaves. Chill cherry-mint syrup.
2. Stir lime juice into cherry-mint syrup. Place two scoops mint ice creamin each glass, then add 1/2 cup syrup to each. Top with club soda. Garnishwith cherries and mint; serve immediately.
