Veal Schnitzel over a bed of flavoured rice.
None of the below measurements need to be exact. Do to taste.
Turn on oven to 180 degrees Celsius.
Prepare schnitzel as usual coating with seasoned flour, beaten egg and breadcrumbs. (Add a pinch of salt and pepper to the flour)
Fry schnitzel in hot frying pan in batches using cooking oil or olive oil to shallow fry.
When cooked - place on paper towel to rest.
Preparing the rest of the meal
Warm the tablespoon of oil in a wok / large fry pan
Fry white or brown onions
Add cooked rice and stir through.
Add soy sauce
Add honey
Add drained stoneless cherries
Stir through
Spray / grease a large baking dish and add the rice mixture. Smooth out.
Arrange cooked schnitzel over the rice
Sprinkle over the cheese to cover the schnitzel
Sprinkle over the chopped spring / green onions
Bake in an oven at 180 degrees Celsius until cheese is melted and browned (approx 15 mins)
