Crispy outside, chewy inside. They are awesome all on their own!!
Preheat oven to 375 degrees F. Cream butter and sugar. Add egg and vanilla and beat well. Sift flour, baking soda and baking powder; add to butter mixture and mix well. With mixer on low, slowly add buttermilk until dough is soft but not wet. Drop cookies onto baking sheet and bake 8-10 minutes or until just set and very lightly browned. Let cool 2 minutes on cookie sheet before removing to cooling rack.
Makes about 2 dozen big cookies.
If you don't have buttermilk, mix milk with a couple teaspoons of white vinegar or lemon juice.
