Chick Pea Salad

A great use for garbanzo beans. Garlic lovers will enjoy this one!

Ingredients

1 bunch Green onions; chopped
1 16-oz can Garbanzo beans; drained
2 large Tomatoes; chopped
3 cloves Garlic; pressed
1 teaspoon Salt
1/2 teaspoon Pepper
1/4 cup olive oil
3 tablespoons Cider vinegar
Lettuce; for serving

Original recipe makes 4 Servings

Servings  

Preparation

Mix all ingredients together in bowl.

Let sit, covered, for 1/2 hour.

Spoon over leaf lettuce in bowl.

NOTE: Be sure to remove the pressed garlic cloves before serving!

I used grape tomatoes and added red onion. Really tasty!

I have this same recipe that I make often, except it's a tad different. It doesn't contain green onions, but yellow onions, and the recipe asks for green peppers. It also asks for lemon juice and allspice.
