2 Papayas; Peeled & thinly sliced, ripe
Zest of 1 Lime; Finely grated
6 Halves boneless chicken; poached
2 Avocados; Peeled & thinly sliced, ripe
1/2 c pecans; Coarsely chopped
Pulp of 1 passionfruit; ripe
2.5 tb honey
Chicken breasts
1/2 c Vegetable oil
salt and pepper; to taste
4 tb Fresh lime juice

Line 6 salad plates with lettuce. Trim any fat remaining on chicken. Cut chicken into bite sized pieces. Alternate chicken, avocado & papaya on plates. Whisk together lime juice, pulp, oil, peel, salt & pepper & honey. Spoon dressing over each salad. Sprinkle with pecans. Serve immediately. File
