In a skillet over medium heat add EVOO
Place the chicken thighs on the pan and cook until golden brown on both sides and set aside on a separate plate
Add onions and cook until translucent, stirring occasionally then add the garlic.
Add 1 cup of chicken broth to deglaze the pan. Make sure you scrape off ll the brown bits and pieces stuck on the pan. This has a lot of flavor.
Add the tomato sauce, bay leaves, juice of pineapple from the can, and season with salt and pepper
Simmer for 50 minutes or until chicken is tender
Add the carrots, potatoes and cook for 6-8 minutes or until tender yet firm
Add the bell peppers and raisin, cook for 3 -5 minutes until peppers and raisins are tender
Add the pineapple and stir all the ingredients together and simmer for 5 minutes
