Yummy comfort food - best with fresh green beans.
Melt butter in a large non-stick skillet on medium heat.
Add cubed chicken, salt and pepper, cook about 5 minutes on each side (165?F internal)
Transfer chicken to a greased 13 x 9 baking dish.
Add the beans and onions to the skillet and saute for 10 -15 minutes, or until crisp-tender.
Add mushrooms and red chili flakes and cook for 2-3 minutes.
Mix Flour in a small amount of the chicken broth, then add remainder of chicken broth to beans and stir in the flour slurry.
Simmer about 5 minutes until it thickens, stirring constantly.
Add the cream cheese (small chunks) and cook 2-3 minutes until the cheese is melted.
Pour mixture over the chicken and spread evenly.
Make the Stove-Top stuffing according the package, fluff and spread over the top of the chicken and beans.
Bake at 400? F uncovered for 30-45 minutes or until nice and bubbly and the stuffing is crisp and browned.
You can use the broiler if needed to really crisp up the stuffing.
Optional: Thinkly sliced red pepper, add to pan with beans.
