Place the potatoes in salted water.
In a large pot, heat the oil, add the onion and cook over medium heat, stirring occasionally, until golden.
Add the chicken and cook on all sides until golden/brown.
Dry the potatoes.
Take the chicken out of the pan, add some oil, add the potatoes and cook until golden.
Take the potatoes out of the pan, add the tomato paste and cook for about a minute, stirring constantly.
Remove from heat.
Arrange a layer of potatoes in the pot (same pot). Arrange a chicken layer above it, then a potato layer, a chicken layer, etc until done.
Add the spices, pour water to cover, and bring to a boil. skim.
Cook over medium heat for 30 minutes, until most of the water evaporate.
Lower the heat, and cook, covered, for 1.5 hours. Alternatively, place the pot in the oven (110C/230F) for 3 hours.
