This healthy but very tasty dish is great for a cool night dinner.
Saute carrots, celery and onions in 2 tablespoons olive oil about 5 mins. Bring broth and water to a boil and add vegetables, chicken and rice. Cook for about 30 minutes. Add parsley and salt and pepper to taste.
I salt the broth a little to add taste to the rice. If you have a little more time you can just cook the vegetables in the broth instead of the saute.
