This soup is a nice healthy and hearty dish, perfect for when its cold outside.
Place chicken in a 3 1/2 to 4 quart slow cooker. Stir in onion, garlic, tomatoes, broth, artichokes, and sweet peppers. Cover; cook on low heat setting for 4 to 5 hours or on high heat setting for 2 to 2 1/2 hours. If using low heat setting, turn to high heat setting. Stir in frozen peas. Cook, covered, for 15 minutes more.
Meanwhile, prepare rice mix according to package directions.
To serve, divide soup among serving bowls. Mound the cooked rice in the center of each bowl. Sprinkle with almonds.
