Add raw shrimp or oysters, if you wish, about
5 minutes before serving.
Combine the flour and oil in a large, heavy pot, preferably of cast iron, and
cook over medium heat, stirring frequently at first then constantly toward
the end, until a very dark brown, almost chocolate color, about 35 to 45
minutes.
Add the onions, celery, sweet pepper, and okra, if using, and cook, stirring
frequently, until the vegetables are tender, about 15 minutes. Add the garlic
and cook about 2 minutes longer. Stir in the stock or broth, tomato, bay
leaves, parsley, and thyme. Bring almost to a boil over medium-high heat,
then reduce the heat to low and simmer, uncovered, for about 20 minutes.
Remove the meat from the chicken, shred or cut the meat into small bite-sized
pieces, and stir the leg and thigh meat and the sausage into the soup. Season
to taste with salt, pepper, and pepper sauce. Simmer for about 35 minutes.
Add the chicken breast meat and simmer to heat through, about 5 minutes.
If you did not use okra, remove the pot from the heat and stir in the file.
(Do not add file if the soup will be chilled first.) Let stand for about 10
minutes, then skim off fat from the surface.
Ladle the gumbo into preheated bowls, top with a scoop of warm rice, and
garnish with green onion. Alternatively, pour into a container and
refrigerate, uncovered, until cool, then tightly cover and store for as long
as 3 days. Skim off and discard any fat; slowly reheat before adding rice
and garnish.
