Chicken and Sausage Jambalaya
1. Cook bacon in large pot over medium-high heat until brown (about 10 minutes).
2. Add smoked sausage and andouille and saute until meat starts to brown in spots (about 10 minutes).
3. And onions, celery, and bell peppers. Cook until vegetables start to soften, stirring occasionally.
4. Mix in chicken and cook until outside of chicken turns white, stirring often.
5. Stir in Cajun seasoning and let cook another minute.
6. Add tomatoes and broth, stir and blend well.
7. Bring to boil.
8. Position rack in bottom third of oven and place pot in oven for about 45 minutes.
