Delicious family recipe - creamy chicken, mushrooms and artichokes served over rice!
Cut chicken into small pieces. Brown chicken in butter in a large skillet. Place cooked chicken in a medium size casserole dish that was sprayed with Pam. Brown the mushrooms in the remaining butter in the skillet.
Preheat oven to 375. While the mushrooms are cooking, cut the artichokes in to quarters or into 6 pieces. Reserve the water from the can of artichokes. Place the artichokes on top of the cooked chicken, spread out, in the casserole dish.
Once the mushrooms are browned, add the flour. It will created a thick paste around the mushrooms, stir until all of the flour has turned to paste and none of it is still white. Add chicken broth, wine and artichoke water a little at a time, stirring constantly. Keep stirring the mixture to keep it smooth and lump free. Add broth slowly until you reach the desired consistency - like gravy. Keep a medium heat while stirring in the broth.
Pour the chicken gravy over the cooked chicken and artichokes. I always make extra gravy so it covers the chicken and artichokes completely. Bake at 375 for 45 minutes. While baking, make the rice.
For more gravy, add 2-3 more tablespoons of butter to the mushrooms, use 2/3 cup of flour instead of 1/2 cup, will require a few more ounces of broth.
Serve over white rice.
This dish is easy to make and it is excellent. I would definitely make extra gravy, this dish is great as left overs too.
