This was one of the first meals I experimented with once my husband and I started dating and it was a hit!! A real simple and quick go to meal that the whole family will love!!
1) Slice the chicken and place in a large skillet with the oil and garlic. On medium high heat, begin to cook chicken for about 5 minutes.
2) Next, slice the pepper and onion and add to the skillet along with the mushrooms. Allow to cook about 5 minutes to soften up.
3) Last, add the drained tomatoes w/ chilies, salsa, cream soup of your choice, corn and beans. Mix well and let cook till heated through, about 8 to 10 minutes.
4) Place some of the mixture down center of tortilla, top with cheese, sour cream, salsa (and/or hot sauce). Roll up and ENJOY!!
