Chicken Cacciatore

Traditional, yet simple


3 lbs chicken breast; (bone in)
2 tbsp olive oil
1 medium Onion; chopped
1 clove Garlic; minced
1 12-oz can petite diced tomatoes
1 10-oz can tomato sauce
1 cup sherry; madiera, or marsala wine
2 tbsp parsley; chopped
1 tsp Sugar
1 tsp sea salt or kosher salt
2 leaves whole
1 tsp rosemary; dried
1 tsp Thyme; dried
1 tsp oregano; dried
Angel Hair; Linguini, or Percatelli pasta

Heat oil in skillet. Brown chicken breasts over med high heat until browned. Season with salt and pepper. Add chopped onion and saute until onions are softened. Add remaining ingredients. Bring to a boil. Reduce heat to simmer, cover and allow to cook for at least 45 minutes. I find it best to transfer the mixture (0nce it has come to a boil) to a crock pot and cook it on low for 8 hours. It just melts in your mouth. Serve over pasta.

We invited friends over, we all liked this easy dish. Took about 20 min. to prepare, left in crock pot all afternoon started pasta when guest arrived. Will make again.
