A beautiful chicken & chorizo paella that is ideal for all the family
Season the chicken in a little salt and pepper as desired
On a low heat gentle start to fry the chicken in olive oil, then add onions, chorizo and stir gently
After a few minutes add the pepper and continue to gently fry adding a teaspoon of tumeric, paprika & garlic
Cook for a further 10 minutes until the flavours start to mingle
Add the paella rice slowly turning the heat down if required
Add 2 cubes of stock to approximately 1 litre of water until cubes fully desolve, pour stock into wok over the rice and simmer
Stir occasionally gently moving the contents of the wok
After 15 mins add 1 more litre of stock and continue to simmer
Once most of the stock (some liquid is good) is absorbed add the garden peas and continue to simmer
Turn off heat and cover wok in foil and leave for 10 mins
Serve & enjoy
