Prepare chicken breasts by cutting lengthwise, making a total of eight pieces. Place between plastic wrap and pound with a mallet until each portion is no more than 1/8 inch thick. Place one slice of prosciutto and a slice of cheese on the chicken. Sprinkle a little thyme if you like. Roll chicken to enclse filling. Coat with flour and dip in one beated egg. Then roll in dry bread crumbs. In a large fry pan melt 3 tablesppons butter and add chicken rolls. cook 15 minutes. Turn frequently to brown all sides. Transfer to warm serving dish. 6-8 servings. kirbybdj 4 years agoThis was a great dish. I baked the chicken in oven 350 deg. For about 40 min. Until it reached 165 deg. Need to spray baking pan with Pam so that breading doesn't stick
CCheryl 5 years agoThis was delish, i used pankc crumbs, i blended them finely in my magic bullet, and i made a nice wine sauce with this it was very tasty, thanks for sharing, CCheryl

mgdowning 10 years agoThis was excellent. It as crispy on the outside and just plain delicious. I didn't cut the chicken into 8 strips. I just pounded 4 halves to 1/8 inch and followed the recipe
