Chicken Cranberry Bake

Baked chicken with a fresh cranberry sauce


3 whole chicken breasts; skinned, boned & halved
1/2 cup onion; chopped
1 tbsp oil
1 cup ketchup
1/2 cup brown sugar; firmly packed
1/2 tsp orange peel; grated
1 1/2 cup fresh or frozen cranberries

Original recipe makes 6



Heat oven to 400 degrees. Grease 3 quart baking dish. Place chicken breast halves in greased dish. Bake at 400 degrees for 25 minutes.

Meanwhile, in medium skillet over medium heat, cook and stir onion in hot oil until crisp tender. Add ketchup, brown sugar and orange peel. Blend until brown sugar id dissolved. Stir in cranberries. Spoon over partially baked chicken breasts. Bake an additional 20 minutes or until chicken is tender. Serves 6.

I didn't have the onion or orange but I made it anyway. We thought it came out quite well. I will make it again with the other ingredients to see if it changes the taste. Looks fancy but easy and fun to make.

Great recipe very easy to do. I used fresh Cranberries from Upper Canada Cranberry Company I would serve this one to company. It would be great at Christmas Time.
