Heat dutch oven over med-high heat. Add onion, celery & carrot. Saute 5 mins. Stir in Sherry and next 3 ingredients (thru soup). Bring to a boil. Cover, reduce heat & simmer 35 mins or until chicken is tender.
Remove chicken. Increase heat to return broth to low boil. Remove chicken from bones and cut into bite-size pieces. Return chicken to pan.
Whisk water and corn starch in a small bowl. Add to pan. Stir well.
Combine Bisquick & milk in a bow. Drop dough pieces into broth. Reduce heat to level 2-3 and simmer 20 mins, stirring occasionally. Cover and cook for 10 mins or until dumplings are done.
