Aunt Ronda's Awesome Chicken Enchiladas. We have a family reunion every couple years, and we have a different immediate family be responsible for the dinner prep each night. I always try and show off my talents and serve an old favorite or something different to wow the rest of the family. Aunt Ronda cooks Chicken Enchiladas and they are so good that my daughter demanded I get the recipe from her.
It's creamy and yummy; it is not spicy which makes it very kid friendly. Enjoy, and thank Aunt Ronda up in Indy when you see her.
Preheat oven to 350.
Poach then shred chicken breasts. Mix shredded chicken, half a cup of the cheese, chilies, and sour cream in a bowl. In sauce pan combine soup, whipping cream, another half cup of the cheese. Heat on med/low till cheese is melted.
Stuff the chicken mixture into the (5-6) burrito shells. Place them in a rectangular dish that has been sprayed with cooking spray. Pour the soup mixture over the stuffed burritos, and add the remaining cup of cheese over the top. Bake for 45 minutes.
I like to put salsa, sour cream, and guacamole on top of mine for serving. I hope your kids like it as much as my daughter!!
You may want to add a little spices to the chicken mixture if you want a little more flavor. I would suggest `1/2 tsp salt, 1/2 tsp pepper, 1 tsp cumin, 1/2 tsp garlic, and 1/4 tsp cayenne pepper.
