Suggest a better descriptionPreheat oven to 200 - 180 C. Peel and cut pumpkin into 2cm pieces. Place pumpkin in tray lined with baking paper and paint on oil. Bake for 25-30 mins until roasted and tender.
If using raw chicken breast chop into cubes and sauté then place in a bowl to cool. If using cooked BBQ chicken then shred then place in bowl.
Sauté the onion and baby spinach.
Combine the chicken, onion, spinach, crumbed feta, sun-dried tomatoes and the roasted pumpkin in the bowl and stir.
Fold out a sheet of filo pastry. Brush with oil. Place another sheet of filo on top. Brush with oil. Fold in half. Place 1/6 of chicken mixture on the filo and fold. Paint top with oil.
Place in 180 C oven for 15-20 mins until filo is golden brown.
Serve with side salad.
Optional flavours, honey, cumin, sweet paprika, lemon.
