Suggest a better descriptionSet a pot of water to boil on the stove for gnocchi.
In the meantime, combine the diced chicken through the garlic and spices in a large glass bowl and mix, making sure to evenly distribute the seasonings. Set aside.
In a large saute pan, bring the two tablespoons of olive oil to a simmer.
Add the mushrooms and saute for a few minutes to get them going.
Add the chicken mixture, allowing it to saute.
After about 5 minutes, add the white wine to the pan. Allow mixture to simmer for a few minutes, and then add the chicken stock and gorgonzola cheese to the pan.
Place the gnocchi in the boiling water as the gorgonzola and chicken stock thicken and add the spinach to the pan.
When the gnocchi begin to float to the top of the water, strain them and add to the pan.
Fold chicken gorgonzola gnocchi to combine and check sauce; if it thinly coats a wooden spoon, then the dish is done.
Place in bowls and garnish with parsley.
