Pound each chickent breast between pieces of plastic wrap until about 3/8 inch tick. In a bowl, stir lemon juice, 2 Tbs of the olive oil, the pomegranate molasses, 3/4 tsp salt and 1/2 tsp pepper. Addthe chickne, turn to coat well, cover and refrigerate for at least 20 minutes and up to 1 hr.
Make the slasa:
Finely grate the zest from the lemon and then squeese 1Tbs juice. Add pomegrante seeds to a bowl. Add lemon zest and juice, scallions, avocado, olive oil, parsley, pomegranate molasses and 1/2 tbs salt. Fold gently & season to taste with salt.
Cook the chicken:
Heat 1/2 Tbs of olive oil in 12 inch skillet over medium heat. Add 2 of the chicken breast can cook until lightly brown, about 3 minutes. Flip and cook until lightly brown on the other side and cook through, about 3 more minutes. Do the sam for other chicken breast.
Serve chickne with salsa
