Lovely Indian style chicken pakora
Add olive oil, tomato purée, lemon juice, & garlic and ginger paste to the chicken pieces and mix well- set aside.
In a separate bowl mix the gram flour, cumin, chilli, & salt then mix well- once mixed add the water slowly mixing all of the time until a smooth and thick batter is made.
Add the chicken pieces into the batter and leave for 20 mins.
Heat the frying oil up in a pan. Medium-high heat. Cook the chicken pieces in batches for aprox 5mins per batch. Batter should turn golden brown, turn the pakora pieces occasionally.
Remove pakora from oil and drain of excess.
Serve with pakora sauce/sliced onion/lemon slices.
