My husband claims that a "chicken philly" is an abomination. If you agree, think of this as a Chicken Sandwich with Mushroom, Onion, and Cheese instead
1. Heat the oil in a large skillet over medium-low heat. Add the onion and mushrooms, season with salt and black pepper as desired, and cook until mushrooms are soft and onion medium-caramelized, 20 minutes.
2. Turn up heat to medium-high, add chicken to center of skillet, and cook until chicken is cooked through--10 to 12 minutes.
3. Adjust and heat oven broiler as needed. Dividing evenly, fill the rolls with the chicken mixture. Top with the provolone and place on a rimmed baking sheet. Broil until the provolone has melted, 2 to 3 minutes.
