Quick and easy pizza.
Preheat the oven to 220 degrees celsius.
Mix the milk, oil and flour (and optionally basil and oregano) in a bowl with a fork.
Then mix with hands, using extra flour to stop dough sticking.
Grease a metal baking tray. Using a rolling pin, roll dough so it extends to around 1cm over the edges of the tray.
Cut rods of cheese and lay them around the edges of the baking tray (optionally add basil and oregano).
Fold the dough over the cheese and press into base to form 'stuffed crusts'.
Spread the plum sauce inside the pizza base.
Scatter tiny pieces of chicken across the sauce. Chicken pieces should be no bigger than 2cm square so they cook well and are easy to cut.
Scatter fresh basil and oregano across the chicken.
Sprinkle a thin layer of grated cheese (not Brie) over the pizza. The Brie will not full melt and this extra layer will hold the pizza together.
Add small slices of Brie across the pizza.
Bake for 10-15 minutes or until edges are golden brown and chicken is cooked.
Serve immediately.
