Suggest a better description1) In a large skillet, heat oil over medium-high heat. Add chicken and cook
for 1 to 2 minutes per side, or until lightly browned. Remove from pan
and set aside.
2) Reduce heat to medium and add onion and garlic. Saute for 2 to 3
minutes. Add tomatoes, 1/2 cup water, wine, vinegar, olives, capers,
and anchovies. Simmer uncovered for 15 to 20 minutes, stirring
often, until the sauce is thickened. Taste and adjust the seasonings.
3) Add the chicken, making sure they are covered in sauce, and simmer
covered for 5 minutes or until the chicken is no longer pink inside.
4) Cook pasta, and place chicken and sauce over each serving.
