Method
Bring the Chicken breast to a boil over high heat. Reduce heat to medium low, and simmer, covered, 30 minutes or until chicken is done. Let stand 15 minutes or until cool to touch. Shred chicken.
Cut the cherry tomato into half.
Mix all the ingredients into the bowl and marinade with olive oil, Lime juice, Thai fish sauce and pepper.
